The kitchen

Cooked over fire, mostly.

There is one wood oven, one grill, and a garden. Most of what reaches the table has been within a few miles of it its whole life.

We don’t print a menu; the kitchen decides at the market each morning and cooks the same thing for everyone.

It changes daily. A taste of what a summer evening might hold:

Grilled octopus
Potato, caper leaf, and a great deal of good oil
Tomatoes & bread
The oldest recipe on the island, and still the best
Line-caught fish
Salt-baked, opened at the table, dressed with lemon
Fig leaf ice cream
From the tree by the terrace, churned each afternoon
In the kitchen
We cook one menu a day, decided at dawn. If the fish is good we buy the fish; if not, we dont. Nothing travels far, and nothing is complicated.
